
The coffees grown in the Toraja region of Sulawesi are well known for their deep rich flavor and full body smoothness. Grown at the highest elevations in Indonesia, 1800 to 2000 meters, which results in beans that are much denser and lend to bigger, spicier notes and thick syrupy body. Beans exhibit a clean smooth blue-green color with a bright golden vein, a sign of quality processing and freshness. The Utara beas are sourced high in the mountains, ensuring they are the highest grown coffee bens available.
When roasted into second crack the coffee boasts a nice dark chocolate aroma with a hint of spice and slight nuttiness. Deep body, with low acidity. Smooth with a hint of spice and a clean, slightly complex aftertaste.
Roast to a rolling second crack, 10-20 seconds. Nice rich color with a hint of oil. Perfection!
