
Grown in the northern portion of Sumatra, in the areas surrounding Lake Toba. The region known as Sidikalang grows primarily arabica coffee and has a large amount of full sun hybrid trees. The resulting cup is a little different from the traditional earthy profile we like in a Mandheling, however they are still quite good, and their cleaner more acidic cup profile provides a sweeter fruity flavor with full body.
We had a sample last year and due to unexpected delays in cupping, we missed what we thought was a great coffee. Needless to say, this year we were eager to try the new crop, and sure enough it measures up to what we remembered. A sweet fruit/floral aroma with a deep headiness which lends to its expected full body flavor. The flavor is clean and refreshing, with deep body and a clean fruit acidity. Brightness is moderate and the finish is well balanced.
Aim for a Full City++ roast, 30 seconds into 2nd crack.
