TIMOR MAUBESSE ORGANIC FAIR TRADE

Our recent stocks of Timor coffees have consistently been superb and this one is no different. Grown at an elevation 800-1500
meters (2600-5000 feet) and
shaded by the full native canopy of the forest. These tall older Arabica trees produce fruit which slowly ripens in a natural environment. The Timor coffee production is 100% pure organic and the coop is Transfair certified. Minimal use of conventional farming methods allow for a truely native grown coffee. Wet processed and sun-dried.
A sweet milk chocolate aroma - deep and rich. Good balance, with crisp mild acidity and deep body. A touch of spice and clean crisp aftertaste. Great in espresso; either solo or blended, dark or light, you can't go wrong.
Behmor users: 1/2 pound roast produced ~1/3 cup of Chaff.
Cooperativa Café Timor (CCT) was founded in the wake of the destruction of much of East Timor after it gained independence from Indonesia in 1999. In 2000, a group of farmers, in an attempt to successfully market their coffee internationally, united to form CCT. Today, the organization has grown to include 19,600 members from 16 base cooperatives and 494 small-scale farmer groups. CCT obtained Fair Trade certification from Fairtrade Labeling Organizations International (FLO) in 2001 and has since greatly benefited from the Fair Trade price. With revenue generated from Fair Trade sales, the cooperative has implemented the following programs and services: • Provide Medical Coverage. A healthcare program that includes the formation of nine stationary health clinics and 24 mobile health clinics. The clinics see an average of 18,000 patients per month. In addition, services are provided free of charge to all cooperative members. • Establish Business Fundamentals. A business skill development program that provides members with training in bookkeeping, management, English language, and computer skills. • Access Consumer Goods. A wholesale purchasing arm of the cooperative that benefits the local community by providing consumer goods at reasonable prices to small retail outlets in rural areas. To date, this project has assisted of 3,000 members and their families. • Infrastructure Improvement. Equipment purchases, including the upgrade of six de-pulping machines and eight fermentation vats.
